I noticed, in looking at a doc in W07 and opening another doc it opens a whole new Word “window”, not a second doc in the already open one. What’s up with that?! No multiple docs in one instance of Word? (like all the previous versions)

In recent versions of Word, showing or not showing individual documents as separate tabs on the Taskbar has been a user selectable option. See these threads for how to switch it:

Word 2007 Closing (Word) – using Word options
need a registry key Tools, Options, View (2002 SP3) (Word) – using a script

It depends on the “Windows in Taskbar” setting (as in Word 2002 and 2003).
      Click the Office button.
      Select Word Options.
      Click Advanced.
Under Display, clear the “Show all windows in the Taskbar” check box.
      Click OK.
