    EXCEL 2007
I want to redesign my Excel sheet with checkbox columns rather than entering text. I’d like the auto-fill list to edit, organize & consolidate options for these cells. It’s many “scroll windows” worth of options.

(I wonder when Windows will ever allow printing or at least text selection for pasting, possible from all dialog type boxes)

I wouldn’t recommend that. Each check box is an object, so you’d be cluttering the worksheet with lots of objects; it’d soon become difficult to manage. You could have the user enter an “x” into cells instead.

You can press Ctrl+C in a message box to copy the text on the message box to the clipboard, ready to be pasted into any application that accepts text.
You can press Alt+PrintScreen in a message or dialog box to copy an image of the box to the clipboard, ready to be pasted into any application that accepts pictures, such as Paint or Word.

Windows doesn’t copy text that can’t be selected. The Auto Filter Text list can’t be selected.

No, the AutoFilter dropdown list is not a dialog, you can’t select, copy or edit it.
If you want an editable list of unique items from a range of cells, you can use Advanced Filter with the “Copy to another location” and “Unique records only” options.
