I’m sure that this is possible, but I haven’t managed to find it anywhere.

When changing to a new machine, what exactly needs to be copied across to retain Subscriptions, Read/Un-read info, Watches, Flags, &c.

Also, where is information about my email folder hierarchy stored (e.g. I have 3 sub-folders hanging of of a main folder)

If you are running XP, you should be able to use the Files and Settings Transfer Wizard, otherwsie, check out Transferring to new machine
