    • Raw ingredients (feeds 4 people).
        4 small potatoes
        400 grams of round beans
        900 grams of Speck (Get the leanest piece you can find at the deli)
        3 small brown onions
        10 gloves of carlic
        Chicken stock (alternative, stock cubes and some boiling water)

      • Method
          Peel potatoes, onions and garlic, put peeled potatoes in cold water.
          Cut both ends off the beans and destring them, putting into water with potatoes.
          Take speck, cut one 10th. off.
          Remove rind from the small piece you just cut off, leave as much fat as you’re comfortable with.
          Cut into small pencil-thin slices.
          Cut 1 onion in half, finely chop one half. (No, not that one, use the other one scold evilgrin)
          Cut the remaining speck in half, and again, and again so you end up with eight pieces.
          Put pressure cooker on stove, put stove on high.
          Put ONE small slice of Speck in cooker, liberally grind pepper on top.
          Once that piece starts sizzling, add the other small pieces of bacon and the chopped onions, grab the beans out of the water and add to bacon, stirring constantly for 2 minutes.
          Now add some 175 ml of chicken stock (or 6 stock cubes and 175 ml of boiling water)
          I know, lot’sa steam, don’t burn yourself fire exclamation
          Immediately add everything that is left, ie 4 whole potatoes, 2 1/2 whole onions, 10 whole garlic gloves.
          Stir
          Sprinkle some finely chopped fresh basil, a bit more pepper on top.
          Put lid on pressure cooker, put safety valve on top, leave on high.

        • Pressure Cooking Time
            Approximately 3 to 4 minutes (depending on the size of the potatoes)
            Serve as soon as pressure has dissipated because you’ll be ever-so hungry by the time the dish is ready yum

          • Condiments
              A nice bottle of Vino Valpolicella
              Fresh home-made bread or perhaps a bread as described here

            • Leftovers
                Any pieces of Speck are absolutely fantastic served cold (you may have to fight for them for next day’s lunch), beans reheated are yummy as well.
