    As some of you know my latest craze is road running and I pleased to say that I am very happy with my progress so far after a gap of some 20 years when I was an accomplished runner.

    Nowadays I tend to run at about 8.00pm of an evening when it has cooled down and the evenings are light. Coming in late from work I do not want to eat so have a break, run and then return home and look for a quick high carbohydrate meal to which I have found cous cous is perfect.

    Now some of you will know cous cous is a rather bland and uninteresting meal and I like to mix in shrimp, vegetables, onions …..or just left over vegetables or meat, a 50-60 gram serving is filling enough.

    Has anyone had any experience of a good tried and tested recipe ( not just a google) for cous cous that they would like to share?

      I use the boxed stuff from Near East. grin Broccolli & Cheese I find rather tasty. yum

      Garbette dotes on cous cous and we usually put stir-fried veggies on top with a little soy sauce – I know, the salt is bad, but at least she eats her veggies. Our kitty likes cous cous, too. Someone must have fed them to him when he was wandering the streets – perhaps near a trendy down-town restaurant?

        I had a little experiment the other day with Lea & Perrins but I decided that the taste was a little too strong but had a few left over veggies, olive oil and lemon juice mixed in and it was delicious yum

      A yummy concoction which was passed on to me by a co-worker uses cooked chicken, feta cheese and julienned sun-dried tomatoes (I use the kind packed in olive oil, and use the oil from the tomatoes in the cous cous, too).

      Cook the cous cous and stir in the other ingredients in proportions that seem pleasing. I usually also add a bit of whatever fresh herb I have on hand that sounds good at the time — fresh parsley or chopped chives work especially well.

        HHmmmnn the sun dried tomato sounds gorgious, I may hang back from the feta cheese though…. hiding grin

        I have reduced dairy product intake for the moment just to lose the spare tyre around the waist …thanks though

          We have skim milk feta available here- would that be an option?

          While my suggestion was more an inspiration for flavor / texture additions to the cous cous rather than a recipe, I’d really miss the creamy texture and the tangy flavor that the feta adds to the dish. If you’re concerned about the extra calories, you could follow Geoff’s suggestion of using a low-fat variety, and you could easily reduce the amount used to a mere soup

            Thanks Samantha, it does sound very nice and will be on my shopping list this weekend as I am not on a diet just being more aware of what I eat and it is amazing how much more energy I have since eating hi carb lo fat grin

            I’ve also read recently that at least 3 servings daily of low-fat dairy products can actually help increase weight loss. (This may be creative advertising by the yogurt industry, but it’s one that I’m willing to believe as I can’t imagine my life without cheeses and other yummy dairy products.)

            The milk industry just got called on the carpet for their advertising claims that drinking milk can help increase weight loss as part of a lowfat diet. They have remove the ads making those claims.

              And there was me thinking that if I ate my bowl of chips that the extra super big blob of mayonaisse that I was going to put on me would make me lose loads of weight grin

              As long as you put it on yourself and not on the chips you won’t gain any weight and your skin will be nice & soft. grin
