Having recently (ish) relocated, I am completely devoid of cookery books and desparately need a pancake recipe for tonight (Shrove Tuesday).
Just a simple one – the type for tossing and and adding lemon juice and sugar….

Anyone?

Excellent, thank you – although I failed miserably to get 12 out of those quantities! (probably due to using a 10″ frying pan.)
Surprisingly, as my kitchen ceiling is just a nadgers over my 5′ 10″ height, I also managed to fail to get any stuck to said ceiling. However, one early one did just miss regaining its rightful place in the pan….

I ended up using a Delia recipe which called for 110g flour, two eggs and 270ml of milk & water. She also recommends melting two tablespoons of butter, then adding it to the mixture. We ended up getting six and one ‘test’ one.

I’d never tried frying pancakes in butter before, always reaching for plain old veg oil. The rest of Christendom has probably been using butter for years, but it was a new one on me. Makes them taste extra yummy.

Geez Leif, You’ve really made me feel guilty. Down under, Pancake Tuesday was yesterday, and I (gulp), (blushes in embarrassment), bought some ready made mixture from supermarket, and just added water.

They were delish, however with Maple syrup and gobbs of butter
