This has just become a common complaint over the last couple of days, with that particular build since it was released on Monday May 4th.
A probable workaround is to change from Current Mailbox to All Mailboxes (or All Outlook Items) on the Search ribbon tab:
Outlook 2019 search: Something went wrong
Outlook 2016 Something went wrong and your search couldn’t be completed
An alternative workaround (until Microsoft fix it in a Click-to-Run update) is to disable Cached Exchange Mode: Turn Cached Exchange Mode on or off
The author of this Microsoft article indicates, in a comment at the bottom a couple of hours ago, that he’s aware that this update has affected Outlook search and is apparently escalating for a fix:

Yes, I phoned this one in yesterday (May 6th) to a Service Provider and they said they had seen a lot of this and once again it was escalated to Microsoft to fix another update that “escaped” before being tested.
Very sad state of affairs to release this buggy stuff at all but especially during this pandemic.
Microsoft testing has become NON-EXISTENT !!
