The easiest way is to keep both the new and old versions of notepad. The old version’s executable is located at C:\Windows\Notepad.exe and c:\windows\system32\notepad.exe so you can just make a shortcut and add it it your start menu.
If you want to uninstall the new version altogether, Settings> Apps> Uninstall the UWP Notepad (UWP = Universal Windows Platform) (BUT, if you lose Right Click > New Text, you will have to re-install UWP Notepad to get it back.)
