Can anyone please tell me how to change the Excel Help (F1) from a small search box to the full help menu including the Contents, Answer Wizard and Index tabs.

Have you turned off the Office Assistant? If you see him (it). right-click it and select options, then clear all check boxes. F1 should now bring up the help window.
Also, if the toolbar in the help window looks like the screenshot below, click the circled button.
