What does it mean when you get an email bounced back because it has too many hops? What is a hop? What would be the likely cause of this error? An incorrect address?

“Too many hops” generally means the mail is caught in a routing loop. Possibly a local alias is pointing to an alias on another system which is pointing back to the original recipient. Can you view the header of the mail? – it may give an indication of where it is bouncing.
(There has to be a hop limit otherwise mail could be caught indefinitely in a loop, getting larger each time as the latest routing information is added.)
