This is not really an easter egg: it’s documented in MSKB article How to insert sample text into a document in Word.

There were ‘real’ easter eggs in Office 2000 and before (for example, Word 97 contained a pinball game and Excel 97 a flight simulator), but after complaints, Microsoft decided not to include any in Office XP and 2003 applications (as far as I know).

Small addition: this only works if you type this at the beginning of an empty paragraph. The result depends on the localized version (English, French, etc.) of Word.

one small addition to Jan’s small addition:

not only does the =rand(x,y) have to be at the beginning of a paragraph but that paragraph can NOT be after certain special characters like a manual page break. Somehow, Word does not think that such a paragraph is really a new paragraph.

Well, a manual line break is a character in the paragraph. But if you ever get into OpenOffice.org, you will see that the program characterizes a page break as a property of the paragraph that follows. This is one of those conceptual difficulties that makes coding practices trickier to transfer to the new environment.
