I’m just trying to set up a table that gives prices for products in pounds and in dollars (I’m in the UK, so pounds are defaults). If I set the dollar field as currency, it displays with a

In your table try setting the Data Type to Number and the field size to single. This should allow you to see the decimals. Then in your query, form or report, format it for $ or Pounds and that should do the trick.

Alternatively, you can define the dollar field as a Currency field and set the Format property to something like $0.00
