To do so with a registry key
Windows Registry Editor Version 5.00
[HKEY_LOCAL_MACHINE\SOFTWARE\Policies\Microsoft\Edge]
“HubsSidebarEnabled”=dword:00000000
“NewTabPageBingChatEnabled”=dword:00000000
The first one disables the Side Copilot icon, the second the “Bing chat” in the middle of the start page.
